Phelim Byrne is Chef / Proprietor of Phelim Byrne Enterprises , mainly consisting of Phelim Byrne Professional Catering Services and Phelim Byrne Cookery Academy in Wexford, from Blackwater in Co.Wexford the award spangled chef opened the doors of Wexford's newest culinary venture in February 2007 and has obtained rave reviews by all who have passed through them since, writer of the adorned food article "Phelim Byrne in the Kitchen' for the people paper group for 5 years now and regularly tuned into on his appearances on RTE’s the Afternoon Show ,Phelim's career got off to a great start in the world renowned Kelly's Hotel in Rosslare where after almost three years, with a distinction from City and Guilds and a Gold medal for Ireland already under his belt he went west for a stint in the five star Park Hotel in Kenmare before taking off on a trip of a lifetime scholarship to the Johnson and Wales University in Providence , Rhode Island in the United States ,after ,once again topping the year with a distinction grade from Failte Ireland in professional cookery and clearing the U.S. University with straight A's Phelim returned home to take the job as Head Chef at the prestige Dunbrody House Hotel in Arthurstown which he held for 4 years prior to the launch of this culinary adventure. Representing Ireland as a Euro toque chef in Istanbul 2004 is showcased in the cookery school with the framed and famed two gold and two bronze medals he claimed for Ireland in his most recent competitive expedition.

Phelim has many achievements and accolades to date some of which are listed below:

 

Feb 2004 - Won 2 Gold and 2 Bronze Medals in the International Culinaire Salon in Istanbul representing Ireland as a Euro-toque chef in the World Cooking Championships

June 2003 - Was accepted as a Euro-toque Ireland member and joined the Slow Food campaign in 2006

Dec 2001 - Awarded the Teddy McGivney Memorial Award from WIT

October 2000 - Won gold for Ireland in the European Cooking Championships in Berlin

Qualified in Professional Cookery from the Waterford Institute of Technology with Distinction

Qualified from City and Guilds with Distinction

Phelim completed a 22 week Management development program. I. T. 2010

Chef on the winning team in the New York food show, 2001

 

Graduated with straight A's studding in the Johnson and Wales University, USA.

 

In 2007 Phelim was awarded best new business start up by the Wexford County Enterprise Board and was a finalist in the Wexford best Business from Zurich and Wexford County Enterprise board

 

In 2007 Phelim was the Regional Champion in the Shell Live Wire Young Entrepreneur of year award and won the National Showcase in the All Ireland Final

 

The cookery school has been listed as one of Ireland’s best in the Bridgestone Guide for 2010

The Cookery Centre

 

The Cookery School in Wexford is a modern environment based on fresh flavours, local produce & simple recipes for either everyday cooking or entertaining at home, classes of groups up to 14 people are promised a relaxed environment, demonstration courses and hands on courses, full notes pack in cookery school folder, individual tuition, tea/ coffee’s, wine, full meals and great fun! A great selection of one day cookery courses, one night cookery courses, weekend cookery courses & long and short term cookery courses.

 

On different days as highlighted in our cookery school courses link above our guests can book in individually , as a couple or as a group and as we cater for all levels of skill, taste and interest - there’s something for everyone!
