Thai and Asian tasty dishes.....
‘The Thai & Asian tasty dishes course offers classes on either a Friday night or a Saturday demonstration or hands on program including an in-site into the healthy and exciting Asian diet, a beautiful selection of fresh dishes using locally sourced products and vegetables combine for really true fresh flavours.
Samples expected on this course could be the traditional Thai green curry with organic jasmine rice and panaeng scented stir-fry of crispy vegetables, pad Thai noodles and king prawns etc.
A good selection of dishes are covered on the course with the option of purchasing ingredients such as lime leaves (dry or frozen), lemongrass, organic coconut milk and curry pastes.
Wine included with the food as well as comprehensive easy to follow step by step notes
Tour of modern Italy........
Our tour of modern Italy covers a fusion cuisine of fresh Italian ingredients fused with modern Italian and Irish dishes, ideal for entertaining this class is free of bolognese, lasagne and pasta making however would include some bought fresh pasta dishes, meats, fish and salads
You drink Italian wines, eat every single dish and have a repertoire of a combination of traditional and modern Italian dishes leaving the course.
Participants receive a full pack of detailed notes and recipes of the evening’s course, full tasting of every dish to the equivalent of a full meal.
Come Dine with me crash course – dinner parties made easy!
My come dine with me crash course demonstration is full of hints, tips and practical recipes enabling participants to create a stylish and most impressive dinner party in their own homes.
Covering a starter, soup, fish course, main course and dessert
Participants receive a full pack of detailed notes and recipes of the evening’s course, full tasting of every dish to the equivalent of a full meal and wine is included …………and maybe a good old Irish coffee to send you home , entertainment is up to you.............
Everyday food with a twist....
Many guests taking part in this course can well hold their own in the kitchen however even the best of us can get stuck relying on the same 5-6 dishes over and over, this course offering new supper ideas is designed to combat that problem giving you simple yet tasty ideas to get stuck into at home , a selection of dishes from meat and fish to snacks and salads there is plenty of inspiration to be gained on this course , full detailed notes given , complementary wine and a bit of fun thrown in for good measure.......................
Supreme seafood and shellfish to savour!
With a selection of great fresh seafood right on my doorstep this course covers everything from whole baked fish to delicate scallops, generally covering a selection of fresh fish including prawns, scallops, monkfish, trout, salmon, fish pies and simple chowder this is a very popular course , demonstration and hands on combined this course offers great dishes to add to your repertoire, full detailed notes given , complementary wine and a bit of fun thrown in for good measure.......................
Melt in the mouth hot pots and slow cooked meals..........
From some of Wexford finest slow cooked beef, salt marsh lamb or even a bit of south wexford venison, this course is ideal for get ahead and also croud pleasing dishes, full of flavour and goodness this course can be a great helping hand towards either everyday cooking and family meals or creating a simple one pot for a group of friends to savour, most dishes freeze well, are gluten free and all are super tasty!

- The cookery school is purpose built and is based in Wexford Enterprise Centre in Kerlogue, ( behind BTW and between the new omniplex and the VW garage
- The cookery school is now in its 5th year of successful operations
- All classes / party nights / team or group evenings are given by Phelim himself
- The maximum numbers at any day or night is 12
- People can book individually, as a couple or indeed as a group to have the school exclusive to themselves
- There are wheelchair facilities
- The cookery school supplies all food, drink, notes, pens etc. , it is a modern environment unlike a classroom effect
- Open vouchers for any amount are a fantastic and popular gift idea where the recipient can then use the voucher towards any day, night or long term course of their choice
